1 16-ounce pkg. elbow macaroni
3-1/2 lbs mild shredded cheddar cheese
2 tsp. of kosher salt
1/2 tsp. black pepper
1-1/2 quart milk (whole or skim)
2 eggs
1 tsp olive oil

Directions:
Directions:
Preheat oven to 350º. Bring the macaroni to a boil in a 2 quart saucepan with 1 teaspoon of olive oil. Cook for 8 to 10 minutes or until macaroni is al dente. Drain off excess water. Add 1-1/2 quarts of milk and 2 eggs.
Apply Pam coating spray to the bottom of the baking dish. Place cooked macaroni in the baking dish. Add 2 teaspoons of kosher salt and 1/2 teaspoon black pepper and mix into noodles. Stir up to 2 or 3 pounds of mild Cheddar shredded cheese into the cooked noodles. Pour 1-1/2 quarts of milk with the 2 egg mixture into the baking dish. Sprinkle with the remaining cheese over the top layer of macaroni.
Bake uncovered for approximately 40 minutes to 1 hour or until top layer of cheese is golden brown.
