2 cups water
1-1/4 cup milk
1 tsp. salt
1 cup quick cooking grits, not instant (I use Quaker)
1/2 cup butter

Directions:
Directions:
In a small pot, bring water, salt and milk to a boil. Slowly stir in grits. Stir continuously until grits are well mixed. Let the pot return to a boil and cover with a lid. Lower the temperature and cook for 30 minutes; stirring occasionally. Add more water if necessary.
Grits are done when they have the consistency of smooth cream of wheat. Stir in half of the butter and serve with remaining butter divided equally on top of each portion, or serve with fruit on the side or with a savory meal.

We had never tried grits until we moved to Charlotte, NC. Katherine McCorkle made this recipe on one of our family camping trips. The boys gobbled them up and from that point on, we were truly converted "southerners".
