2 Tbsp olive oil
1 large onion, chopped
4 garlic cloves, minced
2 lb. ground chicken or diced chicken
1 tsp salt
2 Tbsp cumin
1 Tbsp fennel seeds
1 Tbsp dried oregano
2 Tbsp chili powder
3 Tbsp flour
2 cans cannellini (white kidney beans) or any white bean, rinsed and drained.
1 bunch swiss chard or any kind of greens.
1 1/2 c. frozen corn
1 can stewed or diced tomatoes
4 c. low sodium chicken stock
1/4 tsp crushed red pepper flakes
salt & pepper
1/2 c. parmesan cheese
1/4 c. chopped fresh parsley

Directions:
Directions:
saute onions and garlic in olive oil- 5 min.
Cook chicken in skillet until browned.
Add chicken with onions, then add salt, cumin, fennel seeds, oregano, and chili powder.
Stir flour into mixture.
Add the beans, tomatoes, greens, corn, and chicken stock.
Simmer 60 min.
Add red pepper flakes and simmer 10 min.
Season with salt & pepper to taste.
Put in bowls and top with grated parmesan and parsley.
