2 7-ounce piloncillos
1 cup water
Pinch salt
1 small stick cinnamon
2 heaping Tbs. butter
1 tsp. Mexican vanilla
1 lb. pecans, halved or broken pieces

Directions:
Directions:
Dissolve piloncillos in salted water over low heat. Add cinnamon stick, increase heat, and boil until a drop of mixture forms a soft ball in water (236º). Remove from fire, remove cinnamon. Add butter and vanilla. Beat until candy starts to thicken. Add pecans and beat by hand until candy begins to sugar. Drop quickly onto a buttered pan by the teaspoonful.

Mexican cooks sometimes use a brown sugar called piloncillo for candy making. You can purchase it at HEB or Walmart in Texas stores. You must have everything ready before you begin this recipe. The candy quickly thickens and you will need to be ready to drop it on the pan right away. If you wait, the candy will harden in the bowl. By the way, if that happens, brake the candy into small pieces. It makes a great praline crumble!
