5 lb. Red Potatoes
7 c. Sugar
7 c. Vinegar (White)
1/2 c. Salt
Sprinkle Nutmeg
Sprinkle White Pepper
Sprinkle Celery Salt
Mayonnaise to taste

Directions:
Steam potatoes in half pot of water with cloth over them, then cover. Check with knife for tenderness. Peel while hot. Slice. Make brine: 7 c sugar,7 c. white vinegar, 1/2 c. salt with a sprinkle each of nutmeg, white pepper, celery salt. Cover with brine. Refrigerate overnight. Whatever doesn't absorb, drain. Add mayonnaise to taste.
