41/2 lbs corned beef (rinsed)
Water (how much depends on roasted pan and size of meat!)
1 Cup apricot preserves or Ruth Salter’s Apricot Jam
¼ Cup Brown Sugar
1 tbsp soy sauce

PREHEAT OVEN 350

In a roasting pan with rack on the bottom (if you don’t have a rack make one using aluminum foil) coat rack and sides of with non-stick cooking spray.

Put in corned beef FAT SIDE DOWN! Meat should have come with seasoning. Sprinkle seasoning on beef. Add water to pan until it is 1 inch in height.

Cover with lid and bake (about 1 hour per pound but always use thermometer to check progress).

When there is 30 to 40 mins left remove beef from oven; Combine apricot preserves, brown sugar and soy sauce, pour mixture over beef. Mixture should cover meat completely but some it will slide off into the water.

Put back into oven UNCOVERED and bake 30 to 40 mins more until meat is tender. Basting is optional.
