cupcakes:
2 cups flour
1 teaspoon baking powder
1 teaspoon soda
1 teaspoon salt
1/2 cup shortening
1 1/2 cup sugar
1 teaspoon vanilla
2 eggs
6 oz chocolate chips ...
1/2 cup crushed pineapple (save 3 tbsp for topping)
2/3 cup sour milk (to sour milk add 1 tsp vinegar then fill cup with milk until equals 2/3 cup)

frosting:
2 tablespoons butter
2 cups powdered sugar
3 tablespoons crushed pineapple

Directions:
Directions:
With mixer cream together shortening, sugar, eggs and vanilla. Combine flour,soda, baking powder, and salt. Then combine wet ingredients sour milk and pineapple. Alternate with dry and wet ingredients until all combined then add chocolate chips. Place batter in lined cupcake pans. Bake at 350° for 20 to 25 minutes. Makes 12 large cupcakes. After cool frost with pineapple frosting.
Pineapple Frosting: melt 2 tablespoons butter and combined with 2 cups powdered sugar blend in 3 tablespoons crushed pineapple. Add more or less powdered sugar for desired frosting consistency.
