2 eggs
2 C buttermilk
2 C flour
2 t baking powder (omit baking powder and salt if using self-rising flour)
1 t soda
1/2 t salt
1/4 C +2 T melted butter or oil

Heat waffle iron. Beat eggs, add in rest of ingred and beat till fairly smooth. Small lumps are ok. Pour about 1/3 C batter into center of iron. Close and bake about 5 minutes for 6 inch round belgian waffle maker. Use more batter if you have a large 4 section regular iron.

One morning when Chandler was small he wanted waffles for breakfast. I explained that we didn't have a waffle iron any longer...to which he said "But grandma they are in the freezer"...and I realized he had never had a homemade waffle. Of course, that led to the purchase of a belgian waffle iron for $3 at the next estate sale...which we still use.
These also freeze well in plastic bags...warm up later in toaster.
