1 meaty Ham Bone
2-3 C cubed cooked Ham
1 Onion, diced
1 lb bag dried Great Northern Beans
1/2 - 1 C chopped carrots
2 Bay Leaves
Salt
Pepper

Directions:
Directions:
1. Either place beans in large dutch oven and cover with about 7 C water and let set overnight, or heat beans in water to boiling, boil 2 minutes gently, remove from heat, and cover and let set 1 hour. Drain and rinse beans and add 7 fresh cups of water to beans in pot.
2. To beans and water add the meaty ham bone, chopped onions, and 2 bay leaves.
3. Bring to a boil, cover, and bring down to a simmer, cooking gently for 2 hours.
4. Remove ham bone and bay leaves. Cut any good excess meat from ham bone and add it to pot.
5. Add 2-3 Cups of ham cubes to pot.
6. Add chopped carrots to pot and simmer another 1/2 hour. Beans should be very soft and broth should be creamy colored.
7. Salt and pepper to taste.
