2 T oil
1- 5 to 6 lb first cut or flat cut brisket cut into 3 pieces.
Seasoned with Kosher salt & pepper

4 cloves garlic - smashed and peeled
1 12oz. stout beer
4 stalks celery chunky cut
2/3 c dark brown sugar
1/2 c tomato paste
1/2 c red wine vinegar
1/2 c Dijon mustard
1/2 c soy sauce
2 bay leaves
1 tsp paprika
1 onion chopped.

heat skillet over med/high heat with oil. season brisket and sear each side, this takes about 10 minutes. Add garlic on last side. Transfer brisket and garlic to slow cooker. 5 to 6 quart size.

Pour beer into hot skillet and simmer 30 seconds, scrapping the skillet to bring up all the brown bits from bottom of skillet. Pour beer mixture over brisket in crock pot.

Drop celery and onion chunks into cooker around meat. Add brown sugar, tomato paste, vinegar, mustard, soy sauce, bay leaves and paprika.

Stir and cover.

Cook on low 8 ho9urs or high for 6 hours.

Transfer meat to cutting board for 10 minutes to rest. Then slice and serve.

Thin slice for tender tasty sandwiches served with a fresh Cole slaw. Dip bread in juices like a French dip.
