4 sticks unsalted butter, room temperature
1 1/2 c. sugar
2 c. all purpose flour
2 c. shredded sweetened coconut
1 c. sesame seeds
1/2 c. pecans, chopped

Directions:
Directions:
Preheat oven to 300º. Line baking sheets with parchment paper (these like to stick). In the bowl of an electric mixer fitted with a paddle attachment, beat butter and sugar on medium until light and fluffy. Add flour a half cup at a time, mixing on low speed until well combined. Remove bowl from the mixer; with wooden spoon or your hands, stir in coconut, sesame seeds and pecans. Divide the dough into thirds. Roll each portion into a log about 1 1/2 inches in diameter. Wrap each log in plastic wrap and refrigerate until firm (about two hours).
Using a sharp knife cut logs into 1/4-inch thick slices. Transfer to prepared baking sheets, about 1 1/2 inches apart. Bake until the edges are golden brown (20 to 30 minutes). Cool 5 minutes on baking sheets before transferring cookies to wire rack to cool completely.
