Ingredients: 1 lb eggplant, peeled 1/2 lb bread crumbs 1/2 C evaporated milk 1/4 C melted butter 1/4 C finely chopped onions, bell peppers, and celery 1/4 C milk 2 eggs. slightly beaten 1 T chopped pimiento 2 t salt 1/2 t pepper 1/4 t sage 1/8 t monosodium glutamate 1 1/2 C grated cheddar cheese

Directions:Cut peeled eggplant into 1 inch cubes and soak in salt water in fridge overnight (min. of 6 hours) to remove bitterness. Drain eggplant and pile in pan. Cover with water and simmer till tender. Soak bread crumbs in milk. Saute onions, green peppers, and celery in melted butter for about 15 minutes till tender. Combine cooked, drained eggplant, crumbs, and sauteed vegetables. Add eggs, pimiento and seasonings...blend thoroughly. Placed in greased baking dish and bake at 350 for 45 minutes. Top with grated cheese and return to oven until cheese melts. |

Notes: Whenever Wyatt's cafeteria is mentioned, someone always remembers the baked eggplant...including me. I never passed it by! My other favorite was the banana pudding because they always had browned meringue on top. One day I complimented the server on the pudding, and she said "my dad makes that every day...wait while I go get him"...out he came, beaming, even though he didn't speak English!! Wish I could taste it again...and tell him in spanish this time!!
