1/2 cup pearl rice
1/2 cup almonds, chopped
250 ml whipping cream, whipped
1/4 cup sherry
750 ml milk
2 tbsp sugar, to taste
1/2 tsp vanilla
1 whole almond **

Directions:
Directions:
Bring rice and milk to a boil at medium heat with lid off. Cook 30 minutes on low. Let stand and cool completely before adding the whipped cream. Add rest of ingredients and stir. Chill. Serve with cherry sauce or favorite fruit sauce.

** The whole almond is placed in the rice pudding at Christmas time. Whoever gets the whole almond in their pudding wins the 'marzipan pig' and gets to be a 'winner' on Christmas Eve.
