2 tsp olive oil
1 cup onions, chopped
1/2 cup celery, chopped
1/2 cup green bell pepper, diced
1 tsp garlic, minced
3 cups vegetable broth
3 cups sweet potatoes, peeled and cubed
1 19 oz can tomatoes
1 19 oz can chickpeas, drained and rinsed
1 tbsp lemon juice
2 tsp ginger root, grated
1 1/2 tsp each ground cumin, curry powder, coriander and chili powder
1/2 tsp salt
1/4 tsp ground black pepper
1/4 cup raisins
2 tbsp light peanut butter
2 tbsp cilantro, chopped

Directions:

Heat olive oil in a large saucepan over medium heat. Add onions, celery, green pepper and garlic. Cook and stir until veggies begin to soften.

Add all remaining ingredients except raisins, peanut butter and cilantro. Bring to boil. Reduce heat to low and simmer, covered for 20 minutes. Stir in raisins, peanut butter and cilantro. Mix well and simmer for 5 more minutes.
