2 Red Bell Peppers, roasted
1 T olive oil
1/2 C grated parmesan cheese
1/2 C ricotta cheese
4+ cloves garlic
1/2 tsp red chile flakes
2 T oil
4 large button mushrooms, sliced
1/2 lb. spinach leaves
1/3 C pine nuts, toasted
2 roma tomatoes, diced
1 lb. fettuccine
2 T butter
salt and pepper

Roast peppers: Heat oven to 450 degrees. Oil baking sheet and peppers and roast for 30 minutes or until blackened. Remove peppers and close in a bag to steam until cool. Remove skins and place into a food processor or blender. Add parmesan, ricotta, garlic and red chile flakes and blend until smooth. Pour into small saucepan and heat through.

Saute mushrooms in olive oil, add spinach and garlic until spinach is wilted.

Meanwhile, boil pasta, drain and toss with butter. Add sauce to coat. mix in mushroom mixture, season with salt and pepper, and divide onto plates and sprinkle over the tomatoes and pine nuts.
