Pie Crust:
1 1/2 cups GF all purpose flour
½ tsp salt
1 tsp GF vanilla extract
1/3 cup extra-virgin olive oil
3 tbsp milk


Pie Filling:
1 cup dark corn syrup
1 cup sugar
3 eggs
2 tbsp melted butter
5 ounces of gluten free chocolate chips
1 teaspoon gluten-free vanilla
1 1/2 cups of raw pecans

Directions:
Directions:
Whisk together flour and salt. Make a well in the middle of the mixture, and pour in the vanilla, oil and milk. Using a fork, stir liquids into dry ingredients, forming crumbly mixture that is wet enough to stick together if you squeeze in your hand. If the mixture is too dry, add milk one teaspoon at a time. Pour crust mixture into 9-inch pie pan & press evenly across the bottom & sides of pan.
In a pan, add 1 tbsp of water & chocolate chips. Over medium heat, stir well until chips are melted. Set aside. Combine eggs, sugar & stir till blended. Add corn syrup & mix well. Add melted butter & vanilla mixing well. Put pecans into bottom of pie crust then add filling. Bake at 350 degrees for 50 to 55 minutes .
