1 cup white sugar
1 cup vegetable oil
3 eggs
1 tsp vanilla
2 cups carrots, shredded
1/2 tsp salt
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 1/2 cups flour
1 cup raisins

Icing:
1 4 oz package of cream cheese
1 cup icing sugar
1/4 cup soft butter
1 tsp vanilla

Directions:
Directions:
Combine sugar and oil. Add eggs, one at a time, beating well. Sift all dry ingredients together. Add to egg mixture. Bake for one hour at 300ºF in a 9" x 13" pan. Beat together icing ingredients with a fork until creamy. Ice cake and enjoy.
