1 to 5 pounds cheap ground beef, no substitutions
salt and pepper

Use about 3 ounces of ground beef and roll tightly into a ball. Flatten ball slightly with hands. Place patty into VERY HOT skillet, preferably cast iron. Season to taste with salt and pepper. Press lightly with spatula. Cook on medium high heat until you can no longer pierce it with a fork and all sides are very dark in color. Be sure to press all juices from patty while cooking. Serve on a hamburger bun at least 1/2 inch larger in diameter. Try to find the patty in the bun as you eat it.
