8-10 lb Ham (not spiral sliced or honey baked)
5 lb Potatoes

1. Bake ham for time recommended on package, but first hour set oven to 425 degrees. Ham should be placed in roaster with 1/2 inch of water. Cover. You should almost burn the ham in this first step.
2. Second and consecutive hours have oven turned down to 300 degrees. If water has evaporated add another 1/2 inch.
3. 45 minutes before ham is done, pare and cut potatoes in large pieces. ( 1/2's or 1/3'rds).
4. Cover potatoes with water and cook 20 minutes in large pan. Do not completely cook the potatoes the whole way through. Do not add any salt to water. Drain.
5. Remove roaster from oven. Place ham on tray to rest.
6. To roaster drippings add 3 - 4 inches of water (can use potato water that has been drained in step 4 if desired) and bring roaster broth to a boil on stove till all loose pieces and drippings have formed a dark broth. Turn heat to medium.
7. Carefully spoon each potato piece into the broth. Cook and baste potatoes for 10 minutes or until potatoes turn dark golden color. Salt if necessary.
8. Slice and serve ham on platter.
9. Spoon out and place potatoes in serving bowl. Yum!!

If the ham has a bone in, save it and the left over broth with a little bit of left over ham (can all be frozen) and make ham and bean soup at a later date.
