1 lb potatoes
1 1/3 cups flour
1 tsp salt
3 quarts boiling water
1 tbsp salt
1 cup grated cheese

Directions:
Directions:
Cook potatoes till tender and mash. While warm, add salt and stir in all but 2 tbsp of flour. Stir flour in gradually. Knead well to form stiff dough.

Divide dough in half and form 2 rolls about ¾ inch in diameter. Cut rolls into 1 inch lengths and toss pieces in reserved flour, then mark each with tines of a fork, making 4 distinct lines.

Drop into boiling water and boil briskly about 8 minutes. As gnocci cook, they will rise to the surface. Drain quickly and arrange in lightly buttered shallow pan. Sprinkle evenly with cheese.

Place under broiler 3 inches below source of heat and broil until top is browned and crusty.
