1 cup corn, fresh (cooked), or frozen (thawed)
2 Roma tomatoes, chopped
5 green onions, sliced
3 tablespoons minced fresh cilantro
1 tablespoon olive oil
3 tablespoons lime juice
3/4 teaspoon ground cumin
1/4 teaspoon salt
1 cup canned garbanzo beans, drained
1 cup canned black beans, drained
1/2 to 1 cup Anaheim peppers, seeded and finely chopped (use more for a hotter salad)
8 oz. shrimp meat, rinsed and drained (optional)

Combine all ingredients and mix well. Cover and refrigerate overnight or at least for 6 hours.
