2 eggplants, about 1 pound each
flour for dredging
1 egg
1 tablespoon oil
1 teaspoon salt
1/4 teaspoon pepper
fine bread crumbs, seasoned, Costco
3 tomatoes, sliced
6 ounce Mozzarella cheese, shredded

Directions:
Directions:
Beat together egg, oil, salt and pepper. Cut eggplant into diagonal slices. Dredge in flour. Dip in egg mixture, then in bread crumbs. Place in greased baking pan. Cover with foil pierced with fork to make air vents. Bake at 400º for 15 minutes. Unwrap. Top each slice with slice of tomato and shredded cheese. Return to oven and bake 10 minutes longer 'til bubbly.
