3 lbs. Ground Chuck
1 lb. Bacon, thin sliced
4 Scallions, finely chopped
1 tsp. Garlic, minced
3 tbsp. BBQ Sauce
2 tbsp. Sisters Secret Fragrant Chilies
1/2 lb. Good Aged Old Cheddar
Bread Crumbs to bind
Liquid Smoke

Directions:

Mix together all of the ingredients except bacon and cheddar; add just enough bread crumbs to bind it together. Then using a loaf pan as a mold, place plastic wrap in the cavity. On a cutting board make bacon weave. Invert the cutting board over the load pan and let the bacon drape in. Fill in half the ground chuck mixture, placing the cheese down the center, cover with the rest of the ground chuck mixture.

Once this step is completed, just adjust the bacon slices to cover it. Use remaining bacon, if any, to ensure full coverage on the bottom. This will need to chill in the refrigerator for a couple of hours.

When the loaf is chilled, remove from the mold. Either put in a smoker to cook, or cook in a preheated oven at about 350 degrees for about an hour or so. Let sit for about 15 minutes before slicing so the cheese will set.
