1 Pkg. Chopped Spinach, thawed
1 Small Onion, chopped
Fresh Garlic, minced
2 Cans Sliced Black Olives
1 C. Mushrooms, chopped or sliced
1 Container Feta Cheese
Olive Oil
1 Round Smoked Gouda
1 Chicken Breast per person
1 lb. Bacon
1/4 C. Soy Sauce (maybe a titch more if desired)

Directions:
Directions:
Saute onions, garlic and olives together; add spinach and mushrooms. Cook until hot. Add container of feta cheese. Remove from heat. Pound chicken breasts until thin enough to fold in half; place in soy sauce to coat. Fill one half with spinach mixture, fold over and wrap with a bacon strip or two. Place two toothpicks in folded chicken breast to hold in place. Bake in a 350 degree oven until cooked through.

Broil chicken after cooked through and brown the bacon. Add smoked cheese (Gouda is best) until warm and melted onto the chicken.
