1 T olive oil
1/4 C coarsely chopped onion
2 cloves (1 tsp) minced garlic
15 oz. can black beans, drained and rinsed
2 T lime juice
2-3 T minced jalapeno chile
1/4 tsp ground cumin
salt and feshly ground pepper
3 T coarsely chopped fresh cilantro (optional)

Directions:
Directions:
Heat oil in a small nonstick skillet over medium high heat. Add onion and garlic and cook until tender, 4-5 minutes.

Process beans, lime juice, chile, cumin, salt and pepper and the onion mixture in a food processor until smooth. Stir in the cilantro if desired.
