1 white cake mix
2 c. coconut milk, divided
1 c. milk
3 eggs, separated
1 small pkg instant vanilla pudding
1/2 c. butter
1 c. sugar
1 c. shredded coconut
1 tsp. vanilla

Directions:
Directions:
Preheat oven to 350º. Combine cake mix, 1 cup coconut milk, milk, egg whites and pudding. Mix thoroughly and bake in 2 8" or 9" round cake pans. Bake for 30-35 minutes. Allow to cool.

Slice both layers in half lengthwise (so that you now have 4 layers. Spread filling between each layer. Frost with "Amazing Whipped Frosting."

Filling:
Combine egg yolks, 1 cup coconut milk, butter and sugar in a sauce pan. bring to a boil and continue boiling until thickened, stirring constantly. Add shredded coconut and vanilla. Stir until smooth. Cool completely before spreading on cake.
