1 lb Basque chorizo sausage
1 c chopped onion
3 cloves minced garlic
1 T salt
2 1 lb cans tomatoes
4 potatoes pared and diced (6 cups)
1/4 c chopped parsley
1 c diagonally sliced celery
1/2 c diced carrots
2 T chopped celery leaves
1 1/2 c water or beef broth or vegetable stock
2 beef bullion cubes
1 bay leaf
1/2 tsp dried thyme
1/4 tsp pepper
1 T lemon juice

Directions:
In a large stock pot or Dutch oven, brown sausage over medium heat. Add onion and cook 5 minutes. Add remaining ingredients. bring to boil, reduce heat and simmer uncovered for 40 minutes- or potatoes are fork tender.
