1 lb. hamburger
1 med. Onion (chopped)
1 – 7 oz. canned mushrooms or fresh
1 to 2 cloves of garlic (chopped or pressed)
1 tsp. orange
¼ c olive oil
Salt and pepper to taste
2 – 12 oz. pkgs. Frozen chopped spinach or fresh
1 can cream of celery soup
1 c sour cream
2 large slices of mozzarella or jack cheese (cut in pieces)
5 dashes Tabasco

Directions:
Directions:
In a large skillet combine beef, onion, mushrooms, garlic and oregano. Brown in oil. Salt and pepper to taste. Place unthawed spinach on top of other ingredients, cover and let steam until mixable. In a medium sized casserole, mix semi –cooked ingredients with cream of celery soup and sour cream and Tabasco sauce. Cut cheese in strips and garshish rest on top. Cook uncovered in 350 oven for 15 – 20 minutes.

Note: Oil can be reduced in amount depending on how rich you want this to be. Also, a small of amount of uncooked rice about ½ c or narrow noodles helps absorbs some of excess moisture contributed by frozen spinach.
