2 - 4 oz. Pieces of Dry Spanish Chorizo
6 C. Dry Red Wine
10 Garlic Cloves, peeled
4 Bay Leaves
1/4 tsp. Cayenne Pepper

Directions:
Directions:
Combine all ingredients in large skillet. Bring to a boil. Simmer over moderately low heat turning once, until the chorizo is plump, about 15 minutes. Let stand for 5 minutes.

Transfer the chorizo to a tray and slice on the diagonal about 1" thick. Return the chorizo to the skillet and simmer over low heat. Transfer chorizo to a shallow serving bowl deep enough to allow the poaching liquid half way up the side. Use toothpicks to serve with.
