1 c. graham cracker crumbs
3 tbsp. melted butter
2 tbsp. sugar
3 egg yolks, separated
1 (8 oz.) pkg, cream cheese...room temp.
1 (10 oz.) pkg. Frozen raspberries....thawed
1 c. sugar
Pinch of salt
1 c. heavy cream

Directions:
Directions:
Combine crumbs, melted butter, and 2 tbsp. of sugar. Mix well. Grease pan.
Bake in a 7 x 11 x 11 pan or similar size. Bake at 350º for about 8 minutes or until brown. Cool completely.

Beat egg yolks until thick....add cream cheese, sugar and salt. Beat until smooth and light.

Beat egg whites until stiff....whip cream until stiff and fold both with egg whites into cheese mixture.

With your mixer blend all this with your raspberries, just gently until it looks uniform and smooth. Freeze, then cover and return to freezer.

This is one of my favorite desserts. You can freeze this for 2 or 3 weeks, so it is great for unexpected company.
