1/3 c. butter
1 c. yellow cornmeal (Bob's Red Mill is great)
1 c. all purpose flour
1/2 tsp. salt
1/2 c. sugar
2 eggs, beaten
1/2 tsp. soda
1 c. buttermilk (or 3/4 c. milk, 1/4 c. lemon juice or vinegar) (or 1/2 c. plain yogurt and 1/2 c. water)

**I add tablespoons of wheat germ, flax, bran, etc.
1. Melt butter in small saucepan or microwave.
2. Sift cornmeal, flour and salt twice. Set aside.
3. Remove melted butter from heat and add sugar.
4. In medium sized bowl beat eggs very well and add melted butter and sugar, beating well.
5. Dissolve soda in buttermilk and add with sifted dry ingredients to egg mixture. Mix thoroughly.
6. Pour into greased 8x8 inch pan.
7. Bake about 30 minutes at 375º to 400º
**Muffins require shorter baking time depending on size of muffins..
8. Remove from oven.
