Ingredients:  
Ingredients:  
2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 1/3 cup sugar
1 1/2 cup vegetable oil
4 eggs
3 cups carrots, grated
For the topping -
4 oz. cream cheese, softened
1 1/2 cup sugar, confection
1/4 cup butter
1 tsp vanilla
2 cups coconut, grated
1/4 cup pecans, chopped

Directions:

Cake - Mix the dry ingredients
Add the oiland blend
Add the eggs one at a time and beat after each addition
Finally, add the carrots and blend well
Pour into a lightly greased pan
Bake at 350º for 1 hour
Topping -
Blend together cream cheese, sugar, butter and vanilla
Add the coconut and chopped pecans and mix thoroughly
Spread evenly over top of cake
