2 pkgs. strawberry jello
1 1/4 c. boiling water
1 pkg. Knox gelatin
1 - 9oz. can crushed pineapple
1/2 tsp. zest of lemon
2 tbsp. lemon juice
1 c. diced celery
1 c. whole berry cranberry sauce
1/2 c. chopped walnuts
1/8 tsp. salt

Directions:

Mix Knox gelatin and both packages of strawberry jello in mixing bowl. Add the boiling water and stir with spatula until completely dissolved. Drain pineapple reserving the syrup. Zest lemon peel directly into the gelatin mixture. Add the pineapple syrup, lemon juice and salt. Chill until partially set. Chop celery and nuts. Fold in the pineapple, celery, nuts, and whole cranberry sauce. Place mold on tray and then fill the mold with the gelatin mixture. Chill until firm. Unmold on a bed of lettuce on a platter.

This attractive dish is perfect for entertaining. It is sure to please.
