4 skinless, boneless chicken breasts (halved)
2 eggs
1 1/2 c. fresh bread crumbs
1/2 t. salt
1/8 t. pepper
1/4 c. butter

Sauce:
6 T. butter
2 T. flour
1 c. half & half
1/4 t. nutmeg
1/4 t. salt
2 t. lemon juice

Directions:
Directions:
Dip chicken breasts into lightly beaten eggs. Coat with bread crumbs, salt and pepper and brown carefully on both sides in melted butter in skillet. (be careful not to loose the breading) Cook till golden brown, about 15 minutes.
Remove chicken and add butter, flour and mix together. Then add half & half, nutmeg and salt. Stir till thick, about 5 minutes and add lemon juice.

If Chicken Breasts are thick and not cooked all the way through, put in the oven for a few minutes before adding sauce.

To Serve: Spoon sauce over chicken -- garnish with sliced mushrooms and sprinkle of paprika and sprig of parsley and possibly candied apple for color.
I always serve with Savory Rice and Glazed Carrots, tossed salad and fresh rolls.... (recipes also included in cookbook).

This dish can be made ahead of time and put in refrigerator. I've served this meal to very large groups of hundreds or more.
