1 C flour
1 tsp salt
1/2 tsp nutmeg (optional)
1 egg, beaten
1 T sour cream (or a splash of milk or water in a pinch)
2 T of butter (or bacon fat)

Directions:
Directions:
Bring a pot of salted water to boil. Reduce to a simmer.

Combine dry ingredients, egg & sour cream in a bowl. They should form into a thick, play-dough like ball. Let dough rest 5 minutes.

Pinch off small pieces of dough and add to boiling water.

Boil spaetzles stirring gently until they are floating (approx 5 mins).

Drain spaetzles in strainer.

Melt butter (or bacon fat) in a pan.

Add spaetzles to pan and coat with butter. Fry until golden brown & serve.
