3 large cans Van Camps Pork and Beans (28 oz each)
8 slices bacon, chopped coarsely
1 white onion, diced
1 green pepper, diced
3/4 cup bottled barbecue sauce or catsup (either are equally good)
½ cup brown sugar
¼ cup white vinegar
2 Tbsp. yellow mustard (or Dijon)

In a bowl, mix together the barbecue sauce, brown sugar, vinegar and mustard. Set
aside.

Into a hot cast iron skillet, put chopped bacon and cook until fat is rendered. You
are not browning or crisping the bacon, just getting most of the fat out of it. Use a
slotted spoon to transfer to a paper towel and set aside. (If there is too much grease
in the skillet for your taste (or waist), pour off some, but leave a little for the next
step.

Add chopped onions and peppers to the skillet and cook until soft, about 5 minutes.
Add the cans of pork and beans. Stir to combine and then add the barbecue sauce
mixture. Combine in the skillet.

Pour into a large greased baking dish. Top with the coarsely chopped bacon pieces.
Do not cover. Cook low and slow, about 2 hours at 325ºF.
