Crust:
Graham cracker crumbs - about 1.5 cups
6 tbsp melted butter
1/4 cup sugar

Cheesecake Filling:
3 - 8 oz bricks of cream cheese, room temperature
4 eggs
3/4 cup sugar
1 tsp vanilla
1 cup chopped chile (Place on paper towels to remove as much juice/moisture as possible)

Topping:
1 cup of sour cream
1 tsp vanilla
3 tbsp sugar

Directions:
Crust: Mix the crust ingredients and press into greased cheesecake pan.
(Line the outside of the pan with foil because sometime the cakes 'leak').
Bake at 350 for about 10 min; remove and cool while mixing other stuff.

Cheesecake filling: Mix the cream cheese and sugar; add eggs 2 @ a time; stir in vanilla and green chile. Pour into baked crust. Bake at 350 about 55 min - 1 hour. Take out and cool 5 minutes while mixing topping. Loosen sides of pan (after 5 minutes) and then re-close pan.

Topping: Mix topping ingredients; spread over top of cake. Return to 350 oven for 7-9 minutes.

Cool cake for awhile; leave in refrigerator overnight.
