1 4oz pkg sweet baking chocolate
1/2 c. water
1 tsp. vanilla
1 c. shortening
2 c. sugar
4 eggs, separated
2 1/2 c. sifted flour
1 tsp. soda
pinch salt
1 c. buttermilk

Directions:
Directions:
Combine chocolate & water; bring to boil, stir until chocolate melts. Cool; stir in vanilla & set aside.

Cream shortening, gradually add sugar, beating until large & fluffy. Add egg yolks one at a time, beating well after each addition. Add chocolate mixture, beat until blended. Combine flour, soda & salt. Add to cream mixture alternately with buttermilk, beginning & ending with flour mixture. Beat egg whites until stiff peaks form. Fold in. Pour into 3 greased & floured 9" round cake pans. Bake at 350º for 30-35 minutes. Cool. Spread Chocolate-Pecan frosting between layers & on sides.

Chocolate-Pecan Frosting:
1 1/3 c. evaporated milk
1 1/2 c. sugar
4 egg yolks
3/4 c. butter

Combine in heavy saucepan and bring to boiling. Cook for 12 minutes, stirring constantly. Remove from heat & add 1 tsp. vanilla, 1 1/2 c. flaked coconut, 3/4 c. chopped pecans. Stir until frosting is cool & of spreading consistency.
