1 c. shortening
2 c. sugar
4 eggs
1 c. milk
3 c. flour
2 tsp. baking powder
pinch salt
1 tsp. vanilla

Directions:
Directions:
Cream shortening with sugar, then add egg. Mix dry ingredients, alternating with milk & vanilla.

Filling:
1 c. sugar
1 egg + 1 egg yolk
grated rind of 1 lemon
1 c. boiling water
juice of 2 lemons
3 Tbsp. butter
2 Tbsp. cornstarch

Mix cornstarch & sugar. Add sugar, then rest of ingredients. Cook until thick in double boiler. Ice with butter icing or confectioner's sugar icing.
