1/2 C water (or white wine)
2 t lemon juice
1/8 t chicken broth granules
2 salmon fillets
1 T butter
1 T capers
Black pepper to taste
Chopped parsley if desired

Directions:
Directions:
Bring water and lemon juice to boil in medium size skillet. Add chicken broth granules and dissolve. Reduce heat to simmer and add salmon fillets. Cover and simmer 4-5 minutes per side or till flakes easily with fork. Remove and keep warm.
Boil remaining liquid till reduces to about 1/4 C.
Whisk in butter and capers. Spoon over top of fish. Good over bed of cooked noodles or rice.

This was one back of a package of frozen salmon and is one of the best tasting fish dishes I know of!
And most of the ingred are hanging around the pantry. I've used dry vermouth for the liquid...good flavor.
