Texas Sheet Cake Recipe

2 c. flour
2 c. sugar
1/2 t. salt
1 stick oleo, 1/2 shortening or 2 sticks oleo
1 c. water
3 T. cocoa
2 eggs, well beaten
1 t. soda
1/2 c buttermilk
1 t. vanilla
1 t. cinnamon (if desired)

Directions:
Sift flour, measure, resift with sugar and salt. In a saucepan, put oleo, shortening, water and cocoa. Bring to a boil and pour over flour and sugar mixture. In another bowl put eggs, soda, buttermilk and vanilla. Add to above mixture and mix well. Bake in a greased and floured shallow cake pan( 15 1/2 X 10 1/2 X 1). Bake for 20 minutes at 350º. Start icing the last 5 minutes the cake is baking.

Chocolate Frosting--Ouick 'n Easy
1. stick oleo
3 T. cocoa
6 T. milk
1 box confectioners' sugar
1/2 c. pecans (chopped)
1 t. vanilla

Nix oleo, cocoa, and milk in suacepan. Heat over low flame, but do not boil. Remove from heat and add confectioner's sugar, chopped pecans, and vanilla. Mix well. Frost cake as soon as removed from oven. Cut cake in squares to serve.

For the nonpecan lovers you can eliminate them from the icing.
