1 lb ground beef
1 small onion, chopped
1 16oz jar salsa
1 pkg Taco Seasoning Mix
1 C frozen corn
1 C sliced ripe olives, drained
Crust:
1 C yellow or white corn meal
1 can evaporated milk
1 can green chilies
1 C shredded cheese divided
1 tsp salt
pickled jalapeno slices (optional)

Filling:
Brown hamburger and onions in large skillet. Drain.
Stir in salsa, water, and seasoning mix. Bring to a boil. Reduce heat to low; cook, stirring occasionally, for 3-4 minutes. Add corn and olives.
Crust:
Preheat oven to 425º.
Combine cornmeal, milk, chilies, 1/2 C cheese in medium saucepan. Cook over medium-high heat, stirring frequently for 5-7 minutes or until thickened.
Spoon filling into 9x13 baking dish. Spread cornmeal mixture on top.
Bake for 25 minutes; sprinkle with remaining cheese. Bake for additional 5-10 min. until cheese is melted. Garnish with jalapenos.
