2 eggs, beaten
1 1/2 C sugar, divided use
1 3/4 T flour
pinch salt
2 C milk
1 t vanilla
2 T butter
l baked pie shell

Directions:
Directions:
Combine eggs, 3/4 C sugar, and salt..mix well. Add milk and vanilla. Cook over med low heat till thickened, stirring constantly. Brown remaining 3/4 C sugar in cast iron skillet till liquid and golden brown. Tip skillet to one side...slowly pour in custard stirring constantly till thick and smooth. If sugar gets hard, keep stirring over low heat till it melts into the custard. Add butter and pour into pie shell. Top with meringue and brown in 375 over for a few minutes.

Burnt sugar is my favorite pie...hands down. As a new bride, I tried and tried to make it like my Mom's but the sugar always hardened when I added the custard. I thought it was ruined and threw away several pans of pie filling before learning that you have to keep stirring till the sugar melts again!!! She laughed at this and my early bean-cooking experiences. Relating my cooking failures, I added that my beans just never tasted as good as hers. She asked how much salt I used? Of course, that was the problem...I had used none!!
