2/3 c. flour
1/2 c. oil
1 c. chopped onion
1/2 c. chopped celery
1/4 c. bell pepper (not necessary)
1 Pod Garlic
2 c. water
Dash of Tabasco
1 T. salt
black pepper to taste, a little red pepper if you want.
2 lb. peeled crawfish(cooked0

Directions:
Directions:
Make a dark roux of flour and oil. Add onion, celery, garlic, bell pepper. Simmer until all veggies are tender, stirring often. Add 2 cups water, remainder of seasonings and simmer, covered for 1 hr. Add crawfish and cook about 20 mins. add more water to desired consistency. Serve over cooked rice.
