1 tsp. Salt
1 tsp. Sugar
1 tsp. Vinegar
Boiling Water

Directions:
Directions:
Clean and chop cabbage (as fine as you like it). Pack into quart jars (not tight). Add the salt, sugar, and vinegar on top of the cabbage. Pour boiling water over the cabbage to the bottom of the top rim. Run a knife around the side of the jar and down through the middle of the cabbage to remove any air pockets and let the water go to the bottom of the jar. Seal the lids on the jars as tight as you can. Place the cans in a cool dark place to work. Sauerkraut should be made on the New Moon.
