4½ - 5 lbs cut up chicken
½ head garlic, pureed
3 tbsp. dried oregano
salt and pepper to taste
¼ cup red wine vinegar
¼ cup olive oil
½ cup pitted prunes
¼ cup spanish green olives
¼ cup capers with a bit of juice
3 bay leaves

½ cup brown sugar
½ cup white wine
3 tbsp. parsley, finely chopped

Directions:
Directions:
In a large bowl combine cut up chicken and listed ingredients up to the bay leaves. Cover and refrigerate overnight.

Preheat oven to 350º. Arrange chicken in a single layer in a shallow baking dish and spoon marinade over it evenly. Sprinkle chicken with brown sugar and pour wine around them. Bake for 50 - 60 minutes, basting frequently. Serve and add a few spoonfuls of juice. Garnish with parsley.
