1 3 oz pkg cream cheese
1 stick butter
1 C flour

Directions:
Directions:
Beat cream cheese and butter together till fluffy in the electric mixer. Add flour and mix well.
Form into ball and chill. Roll out 1/4 inch thick and cut into rounds for small muffin pan size tarts or small empanadas. Fill and bake @325 for about 25 minutes.

This pastry just never gets tough...no matter how many times you re-roll it. Freezes well. Kay always makes tiny pecan and lemon tarts for her cookie jar at Christmas.
