1 lb. chopped meat, 2 carrots finely chopped, 2 celery stalks finely chopped, 3 onions finely chopped, 1/2 c. butter, 1 c. dry white wine, 1 c. broth, 1/2 can tomato paste or about 3 oz, nutmeg.

Directions:
Melt butter in saucepan. Add onions, carrots and celery and cook until soft. Add chopped meat, simmer till golden. Stir in the wine, add broth. Raise heat slightly and cook until sauce thickens. Stirring constantly, add the tomato paste, salt and pepper to taste and dash of nutmeg. Stir together well. Cover meat with 1/2 c. hot water. Blend well. Cover pot and simmer over low heat about 1 hour. Use with pasta usually tagliatelle.

I sometimes add a small amount of cream to the sauce at the end of cooking.
