3/4 pound yellow squash
1 egg
1/3 c. mayonnaise
1/4 c. finely chopped onion
2 Tbsp. chopped green pepper
1/8 tsp. thyme
salt & pepper to taste
1/3 c. grated Parmesan cheese
1/2 Tbsp. butter

Directions:
Directions:
Slice & cook squash in boiling salted water until just tender. Drain well & set aside.
Beat egg, then blend in mayonnaise, onion, green pepper, and thyme. Stir in squash and add salt & pepper.
Spoon mixture into a greased shallow 1-qt. casserole; sprinkle evenly with cheese and dot with butter. Cover and chill if made ahead. Bake, uncovered, in a 375º oven for 20 minutes or until puffed and lightly browned.
