1 lb. fresh green beans, trimmed and cut into one-inch pieces
One 10-ounce bag frozen shelled edamame
3 T. Canola oil
3 T. Rice vinegar
1/4 cup 100%-fruit apricot preserves
1 T. Sugar (1 Splenda packet)
1 tsp. Peeled and grated fresh ginger
One 15-ounce can black beans, drained and rinsed
2 scallions (white and green parts), thinly sliced
Kosher Salt to taste

Directions:
Directions:
Steam green beans and edamame for 4 minutes, chill in refrigerator for at least 15 minutes.

In a small bowl, whisk together the oil, vinegar,apricot preserves, sugar and ginger.

Add black beans and scallions to edamame and green beans and dressing.

Toss and add salt to taste.

Served cold or at room temperature.
